Taking Inventory is done by starting up minecraft and opening your inventory. This is done by pressing "E" to see what it is you have to start out with, which is nothing yet.
After that, you can get the rest of the achievements available in the next branch of them.

(NOTE: the older versions had you press "I" to open the inventory, but the newer version has you press "E", unless you change the controls in the menu that comes up when you press ESC.)
